Albacore Tuna Poke Bowl

Serves 4

500 g raw Albacore tuna loin - cut into 1/4 “cubes.

Marinated in:

1 T sesame oil
3 T soya sauce
2 T rice vinegar
1 T crushed chili paste
1 tsp grated ginger
2 tsp white sugar

5 cups cooked jasmine rice

3 cups Julienne, shaved or grated vegetables (this could include, but is not limited to: carrot, cucumber, beets, radish, cabbage, kale, lettuce, avocado, peppers, green onion and just about anything else of your choice, keeping in mind vibrant colors, textures and flavors).

Arrange the above ingredients in a bowl over the rice and garnish with:

Pickled ginger
Spicy mayo (mayo and sriracha)
Sesame seeds
